  • 1 Tbsp. gelatin powder (10gr)
  • 3 Tbsp. cold water
  • 1 Cup of water (250ml)
  • 4 Tbsp of cocoa powder
  • 1/2 Cups sugar (100g)
  • 1/2 Package vanilla sugar (5g)
  • 1/2 Tbsp. white food coloring (optional)


Mix gelatin with 3 Tbsp. of cold water and let stand for 5 min.

Heat sugar, cocoa and vanilla sugar with 1/2 cup of water stirring constantly.
Remove from heat when vapor appears above the surface.
Add gelatin and stir until completely dissolved and add the remaining 1/2 cup of water.
Pour the mixture through a thick strainer to remove cocoa clumps.
Let it cool before use.
To obtain a lighter shade of brown, add white food coloring or use milk instead of water.
