- 1 Tbsp. gelatin powder
- 2/3 Cup milk
- 100g Sugar
- 80gr Dark chocolate
- 1 Cup heavy cream 35%
Mix gelatin with 3 Tbsp. of water and let soak for 10 minutes.
Put milk and sugar into a saucepan and heat while stirring.
Remove it from heat just before it reaches the boiling point.
Add dark chocolate and stir until it’s completely melted. Blend it with a stick blender to make the consistency even.
While the mixture is still hot, add the soaked gelatin. Stir until it’s completely dissolved.
In a separate bowl, beat the heavy cream into soft foam.
When the chocolate mixture has cooled down to room temperature, mix it with cream.
Pour the mixture into desired containers right away. It will thicken up fast.
