To make a large flower cake you will need high quality, odorless, colorless gelatin with a high bloom value and two gelatin art tools.
Prepare 1 liter of clear gelatin and leave in the fridge overnight.
The recipe for the gelatin base can be found here.
When you are ready to start working, prepare the color base and allow it to cool down to room temperature.
The recipe for the color base can be found here.
The color base will thicken as it cools down. If it gets too thick to work with, place it in a metal container and keep it in warm tap water to make it liquid again.
Before you begin, create a small hole in the center using a spoon or a melon baller.
Separate a small amount of color base and add a little bit of color to it. This will serve as a flower center.
Pick a small gelatin art tool and create several small petals.
Switch to larger tools as you move away from the center and add more of the white color base with each new row.
Finish the flower by adding several green leaves at the end.
Prepare a small amount of clear gelatin and add a little bit of color to it. Pour it over the finished flower and leave it in the fridge to set.
Prepare a creamy mousse base using the recipe here, and pour it over the cake bottom. Leave the cake in the fridge to set for a few hours.
To take the cake out of the container, lower the container into warm tap water for a few seconds. When the cake is moving freely in the container, cover it with a plate and turn it upside down. Allow the cake to fall out of the container, onto the serving plate gently.
Be careful when taking the cake out, if you have kept it in warm water for a long time, a lot of melted gelatin will pour out of the container. Keep the cake above the sink until all the liquid gelatin has come out.
Decorate the cake with whipping cream if desired and serve.
