- 300gr Sugar
- 2 Tbsp. Honey
- 2 Tbsp. Gelatin (20gr)
- 100ml Water
- Pinch of salt
- Food flavoring (optional)
Mix gelatin with 6 Tbsp. of water and let stand for 10 minutes.
Make a syrup by mixing water, sugar, honey and salt in a saucepan and boiling for 3-4 minutes (until it reaches 115C).
Put soaked gelatin into a mixing bowl and mix with a little bit of syrup using a hand mixer.
Pour the remaining syrup in slowly and then increase the speed of the mixer. Add flavoring if desired.
Keep mixing for 6-8 minutes.
Line a container with oiled parchment paper and pour the marshmallow mixture in.
Put another, well oiled, sheet of paper on top of the mixture and apply pressure to distribute the mixture evenly in the container.
Let stand in the fridge for several hours.
Cut into desired shapes and dust with icing sugar.
