- 1 Tbsp. Gelatin
- 100ml Milk
- 100g Sugar
- 250g Mascarpone cheese
- 250ml Heavy cream (35%)
Mix gelatin with 3 Tbsp. of water and let it stand for 10 minutes.
In a small saucepan, heat milk and sugar, stirring until the sugar is dissolved.
Remove from heat when vapor appears above the surface.
Do not let the milk boil.
Mix in gelatin and stir until dissolved.
In a mixing bowl, whip the heavy cream into a soft foam.
In a separate mixing bowl, mix the cheese until smooth.
Combine the three mixtures together, add desired flavors and pour into containers.
The mixture will harden quickly, pour it into containers as soon as it is prepared.
(You can also add a bit of warm liquid (milk or coffee) to the mixture to soften it up again)
This mousse base can be used to make many different recipes.
Add chocolate, cocoa, coffee, vanilla, fruit jam, ground nuts and other ingredients to create different flavors.
